6-8 strips of bacon
med sweet onion
1 lg can VanCamp Pork&Beans
1 lg can crushed tomatoes
1 can petite diced tomatoes
1 can( from crushed tomatoes)of water..or more if unexpected guests arrive
4-5 potatoes (peeled & diced to med bite size)
1- 1 1/2 hand of white long grain rice
Season to taste with salt & pepper

Fry bacon (easier if you slice across the bacon to make sm pieces to fry). Add med onion cook until onions are caramelized (that just means until they are almost done), I watch the food channel alot! Cooking on stove top on med-hi. Add all of your canned tomato ingredients, let cook about 10 mins. Add potatoes, then just toss in a hand of white long grain rice. Lower Heat to med, stir, then keep an eye on it, get it to simmer; when the potatoes & rice are done..so is your soup
Now Mama always made fried corn bread patties when she made soups.

I was told it was called poor man's soup...I was just a kid. As an adult I can see why they may have called it that, but it is one of my favorites. I always get Mom to make it for me., when I am home. I even call her sometimes when I am making it, to make sure it is just the way Mema made it.
