1-1/2 c. beef broth
1/4 c. dry Sherry
2 T. butter, divided
1 c. brown medium grain rice
1/2 tsp. thyme
1 large leek, chopped
2 cloves garlic, minced
3 c. sliced, wild mushrooms

Directions:
Directions:
Bring broth, Sherry and 1 T. butter to a boil in a large saucepan. Add rice, thyme & pepper. Cover and simmer on low heat for 45 minutes. Remove from heat, let stand 5 minutes, fluff w/ fork.

While rice is cooking, melt remaining butter in large skillet, add leeks & garlic; cook over med-heat for 5 minutes stirring frequently. Add mushrooms and cook 5-10 minutes more.

Divide rice and spoon mushroom mixture onto each serving. Serve hot!
