4 lamb shanks
1/4 lb. butter
2 small onions, sliced
1/2 white wine
1/2 c. tomato juice,
1 tsp. paprika
1 tsp. ginger (dried)
1 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Roll the lamb shanks in flour and brown in butter . Remove from heat and place in casserole. Add the sliced onions to the same frying pan and cook lightly; then add the wine, tomato juice, paprika, ginger, salt and pepper. Cook and stir until well blended; then pour over the shanks. Cover and bake 250 for 3 hrs. You can also add carrots; if you do, I would pre-cook them a little. This is good served on wild rice.

This was mother's recipe. It is very good. I have also used this with veal shanks.

Another way of fixing lamb shanks: place however many shanks you want to use in pan. Add cut up potatoes and roast together. I just stir it all up with the juices and serve--I don't make gravy with this. I fix this a lot for Charlie and me while in Florida cause lamb shanks are easy to get at Publix.
