3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup self-rising flour
1 teaspoon nutmeg
1 teaspoon ginger
2 teaspoons cinnamon
FILLING:
1 cup confectioners sugar
1 (8 ounce) package cream cheese
1/2 stick margarine

Directions:
Directions:
Beat eggs until fluffy (3-5 minutes). Add sugar. Mix well. Add pumpkin and lemon juice while mixing. Add dry ingredients and mix well. Spread into a greased jelly-roll baking pan. Bake at 350 for 15 minutes. Immediately place finished cake on a confectioners sugar covered towel and roll. Cook in refrigerator for 45 minutes to 1 hour. Mix filling ingredients together and spread onto unrolled cake. Roll this up and cover in aluminum foil.
