1 (6 oz.) box hash brown potatoes
4 c. hot water
5 eggs
1/2 c. cottage cheese
1 c. shredded Cheddar cheese
2-3 tbsp. minced onion, optional
1 tsp. salt
Dash of pepper
6 slices cooked bacon, crumbled

Directions:
Directions:
Pour hot water over hash browns; let stand 10 min., and drain well. Beat eggs; add potatoes and all other ingredients. Pour in greased 10 in. pie pan. Cover and refrigerate overnight. In morning, place, uncovered, in cold oven. Bake at 350 for 35 min., or until potatoes are tender and eggs are set.
