2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c. fresh, sliced strawberries
2 large egg whites
1/3 c. canola oil
3/4 c. brown sugar, firmly packed
1 c. lowfat vanilla yogurt
1/4 c. skim milk
2 tsp. vanilla

Directions:
Directions:
Preheat oven to 400. Using large fork, combine flour, baking powder and salt. Add strawberries and stir lightly to mix. In a large mixing bowl, using a large fork, vigorously mix together egg whites and oil. Mix in brown sugar. Stir in yogurt, skim milk, and vanilla. Add flour mixture to egg-oil-sugar mixture, mixing only until dry ingredients are moistened. Batter should be lumpy. Divide batter equally into 12 paper-lined muffin cups, filling generously. These will be large muffins. Sprinkle each muffin with 1/4 tsp. sugar. Bake muffins 18-20 min., until lightly browned. Remove from muffin tin and serve warm.
