2 c. flour 1 tbsp. baking powder 2 tbsp. sugar 3/4 tsp. salt 6 tbsp. unsalted chilled butter 1/2 c. currants 1 egg 1/2 c. cream 1/2 c. milk
Combine flour, baking powder, sugar and salt in a bowl. Cut chilled butter in small pieces. Cut in butter with pastry blender until mixture resembles coarse crumbs. Add currants. Set aside. In small bowl beat egg with fork; add cream and milk. Stir egg mixture into flour mixture until just blended. Turn out onto floured board; put some flour on top. This is soft dough. Pat out to 3/4 in. high. Cut with biscuit cutter. Place about 1 in. apart on sprayed cookie sheet. Bake at 375º for 12 min. or until golden brown. Serve hot or reheat in the microwave a few seconds .
