1 c. butter 3/4 c. sugar 1 c. mashed cooked carrots 1 egg 2 c. flour 2 tsp. baking powder 1/2 tsp. salt 1 tsp. vanilla
Cream butter and sugar until fluffy. Add carrots, egg and vanilla; mix well. Sift together dry ingredients, add to carrot mixture. Mix well. Drop batter by teaspoonsful about 2 in. apart on greased cookie sheet. Bake at 350º about 20 min. Cool. Frost with cream cheese frosting.
