3 tbs. oil or butter
1 tbs. flour
4 medium size potatoes
1 medium size onion chopped
1 clove of garlic-minced
1/3 c. white wine
1/3 c. chicken broth
1/2 tsp. minced thyme
1 tbs. parsley minced

Directions:
Directions:
Peel and slice potatoes, pat dry. In a heavy skillet, add oil to cover the bottom of a pan. Put flour into a small paper bag and add potatoes, shake to cover potatoes with flour. Add potatoes to the skillet and brown them. Add onion, garlic, salt and pepper. Fry together, turning often until potatoes are brown. Add wine and broth, thyme and cover tightly. Simmer until potatoes are tender and the liquid has been absorbed. Add parsley and mix well. Serve with a baked fished dinner.
