Cake:
4 eggs
2 cups sugar
1 cup oil
2 cups all purpose flour
2 teaspoons cinnamon
½ teaspoon nutmeg
2 teaspoons baking soda
½ teaspoon salt
1 (15 ounce) can Libby’s pumpkin
1 teaspoon vanilla

Icing:
1-8 ounce cream cheese, softened
1 stick butter, softened
1 box powdered sugar
1 teaspoon vanilla
1 cup chopped and toasted pecans

For the cake:
Beat eggs and sugar together, add oil and mix until all ingredients are incorporated. Set egg mixture to the side. Combine flour, cinnamon, nutmeg, baking soda and salt. Mix dry ingredients into egg mixture. Then mix in pumpkin and vanilla. Pour batter into 3 greased and floured cake pans. Bake at 350 degrees for approximately 18 – 22 minutes. Cool completely.

For the icing:
Beat all ingredients (except pecans) until smooth. Ice cake and then press pecans into sides of cake and sprinkle some pecans on top of cake. ENJOY!!!
