1 lb. carrots
1/4 c. liquid from boiling carrots
2 tbs. minced onion
2 tbs. horseradish
1/2 c. mayonnaise
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
TOPPING:
1/2 c. soda cracker crumbs
2 tbs. of paprika
1 1-1/2 qt. casserole

Directions:
Directions:
Preheat oven to 350. Slice carrots lengthwise and parboil. Combine with remaining ingredients except the topping. Place in the casserole. Add the topping and sprinkle with paprika. Bake for 30 minutes. Serve hot.
