1 medium onion, chopped
1/2 c. butter
1 lb. chicken, baked and cut in strips
4 med. potatoes, cut in bite-sized pieces
4 carrots, cut in bite-sized pieces
1 c. cream
1 tbsp. parsley
1/2 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In large skillet saute onion in butter. Add chicken and brown on all sides. Add potatoes and carrots. (I like to partially cook them in the microwave first.) Cover and cook on medium-low until veggies are tender. Stir in remaining ingredients and reduce heat to simmer. Simmer uncovered for 8 minutes.
