5 zucchini squash, 4 inches long
1 large onion, chopped
2 cloves of garlic, minced
1/2 tsp. of parsley and rosemary
1 carrot, grated
1/2 c. grated cheddar cheese
1 1/2 slices of bread
1/2 c. milk
1 egg, beaten
1 9" x13" pan

Directions:

Wash the squash and boil it in salt water for about 10 minutes. Drain and cool. Cut the ends off and cut the squash horizontally. Scoop out the inside mesh. Save the mesh. Put 1tbs. of oil in a frying pan and add the onion, garlic, parsley, carrot, rosemary, and saute it all together. Add the mixture to the squash mesh. Mix well. Soak the bread in the milk and then squeeze slightly and break into small pieces. Add grated cheese, beaten egg, salt and pepper, mix well. Combine the bread mixture with the squash mixture. mix well. Stuff the squash "boats" outer shell with the stuffing mix. Place the squash in the 9"x 13" pan and cover with more grated cheese. Bake in a preheated oven at 350 for 30 minutes or until lightly brown on top.
