2 cups Cherry Tomatoes
1 1/2 tsps. chopped fresh thyme
1 tsp. olive oil
1/4 tsp. each salt and pepper
2 garlic cloves minced
Cooking Spray
2 - 6 oz. Salmon Filets (about 1" ea.)
2 tbls. fresh lemon juice

Preheat oven to 400

Coat jelly roll pan with cooking spray.

Combine tomatoes, fresh thyme, olive oil, salt and pepper and minced garlic cloves ingredients in a bowl and toss ingredients to coat tomatoes. Put tomato mixture into coated jelly roll pan. Bake at 400 for 15 mins.

Add fish to pan and continue baking until fish flakes easily with a fork (about 10 min).

Serve the tomato mix over the fish with a squeeze of fresh lemon juice.

Two servings at 265 calories each.
