3 tbsp. fish sauce
1-2 tsp. red curry paste
2 cans coconut milk
1 can chicken broth
1-2 tbsp. brown sugar
1 c. cooked diced chicken (rotisserie works well)
1/2 c. fresh cilantro
1-2 c. vegetables (favorites include red peppers, onions, carrots, bamboo shoots)

Directions:

Saute the vegetables in a skillet with a little oil and set aside. Combine the first 5 ingredients in the skillet over low heat. Once the paste is dissolved, add the chicken and vegetables and cilantro Simmer about 15 minutes. Serve over white rice.
