1 c. grated carrots
1 c. grated potato
1 c. sugar
1/3 c. oil
1 c. raisins
1 c. chopped nuts
1 egg
1 1/2 c. flour
1 tsp. cinnamon
1/4 tsp. each of nutmeg, ginger, clove
1/2 tsp. salt
1 tsp. soda

mix sugar, oil, and egg
add carrots, potato, raisins and nuts
mix and add the rest of the dry ingredients

Fill quart jars 1/2 full and process for 4 hours.

I times this recipe by 8 and it makes 14 quart jar
Serve Christmas pudding sauce and vanilla ice cream

Mom would make this pudding every Christmas, so to us old folks, it was a tradition. I try to make it every couple of years. It will last in your pantry for a long time. Enjoy
