1lb self raising flour
1/2 lb of margarine
5 oz Sultanas (nicest) or Currants (Traditional)
6 oz white sugar
2 eggs
1 tsp of Lemon essence optional

Directions:
Directions:
Rub fat into flour till like fine bread crumbs add sugar and fruit
Add lemon juice if used to beaten eggs make well in flour mix and add the eggs fold in the flour around eggs until mixture right texture to knead. Roll out dough to quarter of an inch thick use round 2inch cutter to cut out Welsh cakes and cook on bakestone.

Test bake one Welsh cake first to get temperature on bakestone then cook the rest.

The Welsh Cakes freeze well.
