1/2 lb of Sultanas or Mixed Fruit

4oz brown sugar

2 tblsp thick cut marmalade

1/2 tsp mixed spice

one cup warm strained tea

1 egg

1/2 lb self-raising flour

Directions:
Directions:
Soak all ingredients in cup of tea

Add 1 egg and 1/2 lb of self raising flour

Place mixture in 2lb. loaf tin. Cook for one and a half hours at 150 or Gas mark 3/ 4 .

Check with skewer after 1 hour or 1 1/4 hours
When cool slice and spread with butter, or it's just nice on its own.

I usually make double above quantity and make two cakes one to eat and one to freeze I then use one mug of tea for double quantity.

This cake freezes well.
