1 pastry for double crust pie
3/4 to 1 c. of sugar
1 tbs. flour
3/4 tsp. cinnamon
1/8 tsp. salt
5 c. apples, peeled and sliced
1 tbs. of lemon juice
2 tbs. butter
1 9" pie pan

Directions:
Directions:
Prepare pastry, chill dough 15 minutes before rolling it out to fit the pie pan. Roll dough about 2" larger than the pan, fold the dough over the rolling pin and place in the pie pan. Shape the dough into a pie pan shape and with thumb press the dough that extends over the pans edge against the rim which cuts excess dough off. Combine sugar, flour, cinnamon and salt. Arrange 1/2 of the apple slices in the crust and cover with 1/2 the amount of sugar requested. Place the remaining apple slice on top, covering them with the remaining sugar. Sprinkle with lemon juice and top with smalls slices of butter. Roll and fit a top crust on the pie: Seal the edges of the pie crust by folding the top of the crust under the bottom crust and press both pieces of dough together. The top crust may be sprinkled with sugar to help it brown. Bake in a preheated over of 425 for 20 minutes. Then reduce the oven temperature to 350 until the crust is lightly brown.
