1/3 c. firmly packed brown sugar
1/2 tsp. ground ginger
dash salt
2 lbs. sweet potatoes, peeled and cooked
2 baking apples, sliced
3 T. melted butter, divided
1/2 c. shredded coconut
1/4 c. chopped pecans

Directions:
Directions:
Preheat oven to 375. Grease 1 qt. shallow baking dish. In small bowl combine brown sugar, ginger & salt. Set aside. Cut sweet potatoes in 1/2" pieces. Arrange half of sweet potatoes in baking dish. Cover with apples, half the brown sugar mix, rest of sweet potatoes, and rest of brown sugar mix. Spoon on 2 T. melted butter. Cover and bake 35 minutes. Remove from oven. Combine remaining melted butter with coconut & pecans and sprinkle over sweet potatoes. Bake 10 minutes more, uncovered, until coconut is browned.
