3 packages chopped frozen spinach thawed and squeezed dry…very important
1 package Phyllo dough
½ lb Feta cheese crumbled…or 1 small container in deli
3 eggs beaten
Pepper to taste
½ teas nutmeg
1 stick melted butter to start

Directions:
Directions:
Mix together spinach, cheese, eggs, nutmeg and pepper.
I cut my Phyllo in half the short way and use two sheets per roll.
Lay the dough on a cutting board or piece of foil to butter and roll.
Keep the Phyllo from drying out by using a damp towel to cover while you work.

Lay them on your baking sheet seam side down as you work. Then brush with butter and cook @350 for 30 minutes or till golden brown! ~
