4 large egg yolks
1 (14-ounce) can sweetened condensed milk
1/2 cup fresh or bottled Key lime juice
1 tbsp. of lime zest
couple drops of green or yellow food coloring (optional)
1/2 tsp. vanilla extract
1 cup heavy whipping cream
2 tbsp. of granulated white sugar
1 prepared graham cracker pie crust

Directions:
Directions:
Preheat oven 350F. In bowl beat yolks well with fork or whisk. Gradually stir in sweetened condensed milk, vanilla extract and beat until light and fluffy. Add the lime juice, lime zest, and food coloring if desired. Mix thoroughly then pour filling into the graham crackers pie crust; bake for 20 minutes. Remove pie from oven and let cool completely then refrigerate for 8 hours. When ready to serve, prepare the topping by beating the heavy cream and granulated white sugar in bowl with electric mixer until it just holds stiff peaks. Place topping onto the filling of the pie and serve.
