Soup:
2qt. chicken broth, defatted
1 onion, diced
3 stalks celery, sliced
3 carrots, sliced
1c. chopped fresh cilantro
1/2c. mild salsa

Meatballs:
1lb. ground turkey
3tbsp. uncooked instant rice
1/2c. finely minced onion
1/4c. chopped fresh cilantro
1/2tsp. garlic salt
1/2tsp. oregano

Directions:
Directions:
Soup:
Combine all ingredients in a soup pot and simmer for 10 minutes.

Meatballs:
Mix all ingredients together and form into small balls. Bring soup to a boil and carefully place meatballs into soup. Cover and reduce heat and simmer for 30 minutes.
