3 eggs 1 cup oil 3/4 cup maple syrup 2 cups grated zucchini 2 tsp. vanilla 1 tsp. soda 1/2 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1/2 cup chopped pecans 3 cups flour
Beat eggs. Add oil, maple syrup, zucchini and vanilla; mix well. Sift dry ingredients together. Add to zucchini mixture; beat well by hand. Mix in pecans. Place in 2 oiled loaf pans (or makes 24 muffins). Bake at 325 for one hour or until done.
