1/4 c. butter
1 c. chopped onion
4 c. cooked rice
2 c. sour cream
1 c. cottage cheese
1/2 tsp. salt
1/2 tsp. pepper
3 cans (4 oz. each) green chilies, chopped
2 c. shredded WISCONSIN cheese (hey, that is what the recipe calls for)
Chopped parsley

Preheat oven to 375. Lightly grease a 12 x 8 inch baking dish. In a 3-quart saucepan, saute onion in butter until golden. Remove from heat. Stir in hot rice, sour cream, cottage cheese, salt, and pepper. Mix well. Layer half of rice mixture in prepared dish. Sprinkle all of the chilies and half of the WISCONSIN cheese over rice. Top with remaining rice and WISCONSIN cheese. Sprinkle top with parsley. Bake for 25 to 30 minutes. Serve hot.

I used only about 5 oz total of the chilies, and it was fine. I think that using the full 12 oz may be a bit much. I used instant white rice, but I think brown rice would be very good.
