1 onion, chopped
1 large clove of garlic, minced
7 oz. roasted red pepper or 1 fresh red pepper cut up
3/4 c. chicken broth
3 or 4 chicken breasts
2 tsp. salt
1/4 tsp. black pepper
1 tsp. dried basil
8 oz. package cream cheese

Directions:
Directions:
Saute garlic and onion in oil until tender. Place sauteed garlic, onion, red pepper, chicken broth and cream cheese in blender. Blend until smooth. Meanwhile cut the chicken into 1 in. strips and saute in skillet. Season chicken with pepper, salt and basil. When chicken is done pour the sauce over the chicken and bring to a boil. Serve chicken and sauce over your favorite pasta, topped with shredded parmesan cheese and basil.
