12 oz. pork sausage
1/2 red or green bell pepper
1 medium onion, sliced
4 c. sliced zucchini
1 tsp. oregano leaves
10 3/4 oz. condensed tomato soup
1/4 c. water
10 oz. rice, cooked
1 c. shredded Monterey Jack or colby cheese

Directions:
Directions:
Cook rice. In a large skillet, brown sausage with red pepper (cut into julienne strips) and onion. Drain well. Stir in zucchini, oregano, soup and water. Cover. Simmer about 10 minutes or until zucchini is tender. Stir in rice. Sprinkle with cheese. Cover. Cook over low heat until rice is thoroughly heated and cheese is melted.
