5 pounds of Russet potatoes, unpeeled, rinsed well
1 1/4 sticks of butter (3/4 cup)
1 1/2 teaspoons salt
3/4 teaspoon black pepper
1/8 teaspoon nutmeg
1 cup half and half
1 cup chopped fresh chives

Directions:
Directions:
1- Butter 9x12x2 glass baking dish.
2- Add potatoes to large pot of boiling salted water. Cover partially; boil until tender, about 35 minutes. Using slotted spoon, transfer potatoes to work surface. Cool 15 minutes. Peel potatoes: place in large bowl.
3- Add butter, salt,pepper and nutmeg, mash thoroughly.
4- Bring 1 cup of half and half and1 cup of chives to simmer in small saucepan.
5- Add to potatoes and mix well. Season with more salt and pepper, if desired. Transfer mashed potatoes to prepared dish. Using edge of large spoon, make scallop design or ridges in top of potatoes. (Can be made 1 day ahead. Cover and chill.)
6- Preheat oven to 350 F. Bake potatoes uncovered until heated through, about 1 hour.
