8 large baking potatoes
1 8 oz sour cream and chives
1 3 oz cream cheese
2 Tablespoon butter
1/2 cup bacon bits
2 cup shredded cheddar cheese

Directions:
Directions:
Bake potatoes and let cool slightly. Cut each potato and scoop out the potato leaving about 1/4 inch on the skin to create a stable boat. Place the scooped potato a mixing bowl and add the rest of the ingredients. Add milk if needed. Place scooped out potatoes on a cookie sheet lined with aluminum foil. Fill potatoes boats with mashed mixture. Reheat for 30 min.
