2 tablespoons vegetable oil
lb sweet or hot Italian sausage (3 links)

1/4 cup butter or margarine
cup unsifted all-purpose flour
1 teaspoon salt
teaspoon pepper
2 cups milk
cup grated Parmesan cheese

Cheese Filling
1 container (1 lb) cream-style cottage cheese or 1 container (1 lb) ricotta cheese
cup grated Parmesan cheese
1 large egg
1 tablespoon chopped parsley
teaspoon salt
1/8 teaspoon pepper
lb mozzarella cheese, grated Paprika

Preheat oven to 350f. Cook ziti in lightly salted boiling water according to package label directions; drain thoroughly. Heat vegetable oil in a small skillet over medium-high heat. Add sausage and cook for 1o minutes, turning frequently until browned. Remove from skillet. Prepare sauce: Melt butter in a medium-sized saucepan; removed from heat. Add flour, 1 teaspoon salt and teaspoon pepper. Gradually add milk, stirring until mixture is smooth. Over medium-high heat, bring milk mixture to boiling, stirring constantly. Remove the sauce from the heat and stir in Parmesan cheese. Place drained ziti in a large bowl; pour sauce over ziti and toss to combine. Using a small sharp knife, cut sausage into 1/2 inch thick slices. Set aside. Make cheese filling: In a medium-sized bowl, mix cottage cheese with cup Parmesan cheese, egg, chopped parsley, salt and pepper, mix well. Spoon half of the ziti mixture into a 2 - quart baking dish or casserole. Spread cheese filling on top of the ziti mixture in the baking dish; spoon on remaining ziti mixture. Arrange sliced sausage on top, tucking slices partially under ziti mixture. Sprinkle casserole with grated mozzarella cheese and paprika. Place casserole on center rack of oven and bake uncovered for 30 minutes or until cheese is melted and casserole is hot and bubbly. Remove from oven and let stand 5 minutes before serving.
