1 cup stone-ground grits
salt and pepper to taste
1/4 cup butter
2 cups shredded sharp cheddar cheese
1 lb. shrimp, peeled and deveined
6 slices bacon, chopped into pieces
4 tsp. lemon juice
2 tbsp. chopped fresh parsley
1 cup sliced green onions
1 large clove garlic minced

Directions:

1. In a saucepan, bring 4 cups water to a boil. Add the grits, salt and pepper to taste. Stir well with a whisk. Reduce the heat and simmer covered until all the water is absorbed, usually 10 - 15 minutes. Remove from heat and stir in butter and cheese. Keep covered until ready to use.

2. Rinse the shrimp and pat dry. Fry bacon in a large skillet until crisp, then drain on a paper towel Add the shrimp to the bacon grease in skillet and saute over medium heat just until they turn pink, about 3 minutes. Immediately add the lemon juice, parsley, green onions, and garlic. Remove from heat.

3. Pour grits into serving bowl and pour shrimp mixture over grits. Garnish with bacon bits.
