1 lb. ground beef
1/2 c. chopped onion
2 - 4 oz. cans whole green chilies, drained
1 - 6 oz. pkg. shredded cheddar cheese
1/4 c. flour
1 1/2 c. milk
4 eggs, beaten
salt and pepper to taste
dash of Tabasco
1/2 tsp. cumin

Preheat oven to 350. Brown beef and onion, drain. Sprinkle meat with salt and pepper. Halve the chilies,lengthwise and remove seeds. Place half of the chilies in 10X6X1 1/2 inch baking dish. Sprinkle with cheese and top with meat mixture. Arrange remaining chilies over meat. Combine flour, milk, eggs, tabasco and cumin. Beat until smooth and pour over the chilies. Bake for 45 to 50 minutes. Cool 5 minutes before serving.
