Ingredients: 5 c blueberries, picked over, rinsed, and dried 1/2-1 c sugar, depending on taste/sweetness 2 tbsp cornstarch OR 3 tbsp instant tapioca pinch salt 1/4 tsp cinnamon 1 tsp minced lemon zest (optional) pinch allspice OR nutmeg 2 tbsp unsalted butter, cut in bits 1 tbsp freshl squeezed lemon juice Milk as needed 9" Top and Bottom Pie Crusts

Directions:Gently toss berries with sugar and thickener, salt, and spices. Stir in lemon juice and zest, and pile into crust - higher in the center, and dot with butter. Cover with top crust, decorate edges with fork or fingers. Refrigerate while you preheat oven to 450º. Place pie on baking sheet and brush top lightly with milk and sprinkle with sugar. Cut 2 or 3 long slits in the top crust with a sharp knife to allow steam to escape. Place in oven and bake for 10 min. Reduce heat to 350º and bake another 40-50 min, or until pie is golden brown. Do not underbake. Cool on rack before serving warm or at room temperature. |

Notes: This comes from a book titled "How to Cook Everything." If using raspberries or blackberried, increase thickener by 1 tbsp. For strawberries,, use 5 cups, cut the berries in half, and use 3 tbsp cornstarch or 4 tbsp tapioca.
