Cinnamon Graham Crust:
12-15 graham crackers
3 T. sugar
1/2 tsp. cinnamon
3 T. butter, melted

Filling:
3 - 8oz. pkgs cream cheese
3/4 C. sugar
3 eggs
1 C. sour cream
1 tsp. vanilla

Directions:
Directions:
Preheat oven to 350. Make crust: Crush crackers to make 1 C. crumbs. Combine crumbs, sugar & cinnamon in small bowl. Stir in melted butter until blended. Press into bottom of 9" springform pan. Bake 10 min. Cool on wire rack while preparing filling. Increase oven temp to 450. Beat cream cheese in lg. bowl with electric mixer at medium speed until fluffy. Beat in eggs, 1 at a time, at low speed until well blended. Stir in sour cream and vanilla. Poor filling into crust. Bake for 10 min. Reduce oven temp. to 250. Bake for 30-45 min. until center is just set. Remove pan to wire rack. Carefully loosen edge of cake with narrow knife. Cool completely on wire rack. Refrigerate for several hours uncovered. Add topping of choice.
