1 1/2 c graham cracker crumbs
1/4 c sugar
1/4 cup melted butter
1 can (16oz) Libby's solid pumpkin
1/2 c brown sugar
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ginger
1/8 tsp cloves
1 qt vanilla ice cream (soft)
whipped cream or cool whip

Directions:

Mix crumbs with sugar and butter. Press into bottom of 9 in square pan.

Combine pumpkin with brown sugar, salt, and spices. Fold in ice cream. Pour into crumblined pan. Cover and freeze until firm. Cut into squares and top with whipped cream. You might want to set it out to soften a bit before trying to cut.

I remember making this one with mom every year to take to Kuglin's for Thanksgiving. It was one of mine and Roberta's favorites. I still make it but use gingersnaps instead of graham crackers for the crust. You also can double to make a 13 x 9 pan.
