1 T minced onion
3/4 tsp oregano
2 medium diced cucumbers
1 15 oz can of cannellini beans rinsed and drained
1 diced red bell pepper
1/4 c olive oil
1/4 c red wine vinegar

Directions:
Directions:
Whisk together olive oil and red wine vinegar and combine rest of ingredients. Season with pepper and serve with grilled chicken or fish.
