Directions:
Heat olive oil over medium heat in a deep fryer or heavy, deep skillet (375 degrees).

In a shallow dish, combine cup milk and cup water.

In another dish, whisk together: cup corn flour
cup all purpose flour
1 tsp. salt

Dip the haddock in the milk wash. Let the excess drip off then dredge in the breading mix, shaking off the excess flour. Repeat by dipping the fish once again into the wash and the breading.

Slide the fish into the hot oil and fry until the fish is golden brown on both sides and cooked through (about 3 minutes). Do not over cook. Drain on paper towels.

Serve with favorite condiment and enjoy!
