1 cup canned pineapple juice
4 tablespoons flour
3 tablespoons sugar
2 eggs
1 cup whipping cream

Directions:
Directions:
Mix sugar & flour and add enough juice to make a smooth paste; set aside. Heat remaining juice in a sauce pan and add flour mixture. Continue to cook over low heat stirring constantly until thickened. Add eggs, beaten until light, and cook over low heat about 10 more minutes, again stirring constantly to prevent lumping. Chill overnight. Just before serving mix in whipped cream. Serve over fresh fruit.

Suggested fruit: canned pineapple tidbits, mandarin oranges, chopped fresh apples, orange sections, red grapefruit sections,1 large can fruit cocktail. Be sure that all fruit is drained before adding the dressing with the whipped cream.
