1 pkg. (7 oz.) angel hair pasta
2 small zucchini sliced 1/4 inch thick
2 garlic clove, minced
1 can (16 oz.) Mexican diced tomatoes, (do not drain)
1/4 cup minced parsley
1 tsp. ground oregano
1/8 to 1/12 tsp. red pepper flakes

Directions:
Cook pasta according to package directions. Meanwhile, in a skillet, saute zucchini & garlic until crisp and tender. Add tomatoes, parsley, oregano and red pepper flakes. Heat through. Drain pasta. Top with zucchini mixture.
