8-12 oz cooked chicken breast shredded
5 oz frozen spinach (thawed) or 1 oz fresh spinach
16 oz ricotta cheese
3 oz mozzarella cheese, shredded
1/2 tsp black pepper
1 tsp salt
12 lasagna noodles or 1 package of manicotti shells or just regular large shells(cooked according to package directions)

Sauce:
half jar of favorite alfredo sauce
half jar of favorite marinara sauce
3 oz grated parmesan cheese

Directions:

MIx together chicken, spinach, mozzarella, pepper and salt
and mix thoroughly.
Place 2-3 rounded tbsp in the center of each noodle (and roll up if your using lasagna noodles.)
Place filled noodles side by side in a baking dish.
Mix alfredo and marinara sauce together and pour evenly over stuffed pasta and sprinkle with parmesan. Cover with aluminum foil and bake a 350 for about 20 minutes. Remove foil and continue baking for another 20 minutes.

This is a copy cat of Macaroni Grills Chicken cannelloni so if you like their version you'll love this! Its also really good to add mushrooms, artichoke hearts and or sun dried tomatoes into ricotta cheese mixture.

The ingredient amounts can be adjusted according to your taste.
