Season a roast well with first 4 ingredients. Rub in well. Make a mixture of regular mustard and kitchen bouquet. Smear all over the roast. Let dry for about 45 minutes, then cover with Kosher salt. The Kosher salt will not make the meat salty but will seal in the juices.
