1 cup long grain white rice
1 small yellow onion diced
2 cloves minced Garlic
1/4 cup canola Oil
1 cup water
1 cup salsa

Directions:
Directions:
In a heavy bottom sauce pan, sauté rice and onion in oil, stirring frequently. When onion is tender and transparent and rice starts to very lightly brown, add garlic and stir for another minute or two, then add water and salsa.
Bring to a boil, then reduce heat to low, cover and simmer for 20-25 minutes, until all liquid is absorbed.
Fluff with a fork and serve.

For spicier rice, use less water and more salsa (still to equal 2 cups) For less spicier reverse the formula to more water and less salsa.
