4-6 chicken breast halves, skinned (I use the frozen boneless you by in bags)
c. white wine or cooking sherry
1 c. salsa
c. sliced black olives
1 bunch green onions, chopped
1-1-1/2 c. shredded cheddar cheese
1 16 or 32 oz. can refried beans
Tortilla chips, shredded lettuce and diced tomatoes to garnish

Directions:

Brown chicken in hot frying pan sprayed with Pam on medium high heat for about 5 minutes. Reduce heat to medium low and add the wine. Spoon salsa, olives and onions on top of chicken. Cover pan and simmer 20 minutes or until chicken is done. Put cheese (use all but c.) over chicken and cook until cheese melts.

Put refried beans in a bowl and top with c. cheese. Microwave until heated through. Place beans on individual plates, top with chicken and garnish all around with tortilla chips. Add lettuce and tomatoes on top (optional).
