1-2 t. olive oil
1 large onion, sliced
2 cloves garlic, peeled and minced
4 boneless, skinless, chicken breast halves, cut in pieces
8 oz. fresh mushrooms, sliced
1 yellow mild pepper, seeded, cut in strips
12 small red skinned potatoes, boiled and cubed (skin on)
2 T. fresh basil
1 T. fresh oregano
18-20 red cherry tomatoes
12 pitted Greek black olives, sliced
╝ pound feta cheese, crumbled

Directions:
Directions:
SautÚ onion, garlic and chicken in olive oil, over medium heat, until meat is browned and onions are limp. Add mushrooms, yellow pepper, potatoes, basil and oregano, cooking over medium heat until veggies are tender, yet slightly crisp. Add tomatoes, cooking until they start to split. Top with feta cheese and olives, and heat through.
