Combine 2 yolks, 1 c. water, 1 T. cider or wine vinegar, 1 tsp. salt, 1/4 tsp. pepper and 1 T. oil. Gradually stir into the 1 c. flour until smooth. Let stand 30 minutes.

In deep fryer or other deep pot, heat about 3" of oil to 375. Cut fish into serving pieces, if necessary.

Dip fish into batter and let the excess drip off.

Slip a few pieces at a time into the hot oil and cook until golden brown, about 5 minutes.

Drain on paper towels. Repeat with remaining fish.

Set drained fillets on wire racks so that the underside won't get soggy while you fry the rest of the fish.
