½ cup dry Italian bread crumbs ½ cup grated Parmesan cheese 4 whole boneless chicken breasts split and cut into strips salt to taste lemon pepper seasoning to taste
Sauce: (I either double or triple recipe for sauce) ¼ cup butter or margarine 2 cloves of finely minced garlic 3 Tbsp. lemon juice ½ teaspoon of dried thyme
Preheat over to 350 degrees. Combine bread crumbs and Parmesan cheese in a bowl or dish. Dip the chicken strips in crumb mixture to coat. Sprinkle with salt and lemon pepper seasoning and set aside. In 9 x 12 inch pan melt butter and stir in garlic, lemon juice and thyme. Arrange coated chicken in a single layer in the butter/lemon mixture in baking dish. Bake for 35 minutes or until chicken is done at 350°.
Yield: 4 servings
Serving ideas: I usually serve with rice because sauce goes well with it. During the last 10 minutes of cooking you can put sliced mushrooms on top of chicken. Delicious.
