8 c. mixture of Romaine and red leaf lettuce
½ medium-size red onion, sliced thinly
1 can (11 oz.) mandarin oranges, drained
1/3 c. pine nuts, toasted
Freshly ground black pepper, to taste
Arrange lettuce, red onion, mandarin oranges and pine nuts in a large bowl. Season with black pepper.
¼ c. lime juice
¼ c. lemon juice
¼ c. olive oil
¼ c. light rum
3 to 5 T brown sugar
1-1/2 tsp. grated lemon rind
Combine lime and lemon juices, oil, rum, brown sugar and lemon rind in blender for 2 minutes or in a jar. Drizzle over salad.
