Cook 8 oz. (3 c.) penne; drain and rinse in cold water Whisk together: 2 T. red wine vinegar ¼ c. olive oil 2 pressed garlic cloves 1 tsp. salt and ½ tsp. pepper in a large bowl Stir in penne, 2 c. shredded cooked chicken breast 4 c. baby spinach ¾ c. kalamata olives 1/3 c. toasted pine nuts Makes 5 servings
