3/4 c. graham cracker crumbs
1 tbs. sugar
2 tbs. melted margarine
FILLING:
3 8oz. pkg. non-fat creme cheese
2 eggs
1/2 cup sugar
1 tsp. vanilla
SAUCE:
1 12oz. pkg frozen raspberries
2 tbs. sugar

CRUST: Combine crumbs, sugar and melted margarine. Press into the bottom of a spring form cake pan. Refrigerate. FILLING: In a large mixer bowl, beat the cream cheese which is room temperature, for 5 minutes. Add sugar and continue to beat a few more minutes until mixture if light and fluffy. Add eggs, one at a time. Beat on low speed after each addition. Add egg substitute and vanilla. Mix well. Pour on top of the crust. Bake in a preheated 350 oven for 45 minutes. Remove from oven and cool on rack for 15 minutes. With a sharp knife run it between the cake and pan to help assist in removal of the cake after the cake has been refrigerated overnight. Cover the cake with plastic wrap before placing it into a refrigerator. SAUCE: puree the defrosted raspberries with the sugar. Strain mixture through a fine sieve. Place 2 tbs. sauce on each piece of cake and serve.
