4 C sliced Cucumbers
3 C chopped Tomatoes
2/3 chopped Onion
1/2 C chopped Parsley
1/2 lb mashed Tofu
3 T Lime Juice
1 tsp Sugar
1/2 tsp Salt
1/4 tsp Pepper
2 T Oil

Directions:
Directions:
Mix in a large bowl the cucumbers, tomatoes, onion and parsley. In a blender, blend the tofu, juice, sugar, salt, pepper, and oil. Pour juice mixture over salad and toss.
